Cinnamon Coconut Chia Pudding

Ingredients

  • 1/4 cup chia seeds

  • 1 cup milk of choice (I use unsweetened vanilla almond milk)

  • 1/4 cup unsweetened coconut shreds

  • 2 T. Maple syrup, agave, or honey

  • 1 tsp cinnamon

  • pinch of sea salt

Directions

1. To a sealable container, add all of the ingredients.

2. Stir all of the ingredients together well or the chia seeds will get clumpy and not absorb the milk.

3. Put the top on and shake a few times.

4. Let rest in the fridge for 4 hours or overnight.

5. Serve with Greek yogurt or as is!

Tips and Tricks:

If you can’t tolerate the texture of chia seeds but still want the benefits, try blending the chia pudding! It will be a smoother texture.
