Classic Turkey Meatloaf

Ingredients:

  • 2 pounds ground turkey

  • 1/2 cup breadcrumbs (sub for almond flour if you are gluten free)

  • two eggs

  • 1/2 cup milk of choice (2%, buttermilk or almond milk works)

  • 1 T. low sugar ketchup such as natures promise (Food Lion)

  • 1 T. Worcestershire sauce

  • salt (kosher or sea salt) and pepper; to taste

  • One small yellow onion; diced small

  • One small green bell pepper; diced small

  • Italian seasoning; to taste

  • 2-3 cloves minced garlic

  • Optional but recommended: Fresh minced parsley

    For the Glaze:

  • 1 cup low/no sugar ketchup

  • 1/4 cup honey, agave, or maple syrup

  • 1 T. molasses

  • 1 T. apple cider vinegar

Instutions:
1. Preheat the oven to 375 degrees and prep a 9x5 loaf pan with parchment paper or brush it with oil. You can also just use a baking sheet and shape the meatloaf free form.

2. Combine all of the ingredients for the meatloaf in a large bowl and use your hands to incorporate. You can wear gloves if that makes you feel more comfortable.

3. Shape the loaf and place it into the pan or onto the baking sheet.

4. Bake in the preheated oven for 50-55 minutes or until internal temp is 165 F.

5. While the meatloaf cooks, stir together the ingredients for the glaze.

6. After 20 minutes, brush the glaze over top and continue baking until meatloaf is done. You can brush the glaze on before baking but I like to do it halfway so it doesn’t get too brown and dry.

7. Serve with your favorite veggies!
