Easy Turkey Chili

Serves 4-6

Ingredients

  • 2 T. Olive Oil or ghee

  • 1 medium onion

  • 1 green bell pepper

  • 1 pound lean ground turkey

  • one 28oz can of Cento crushed tomatoes (this is the best brand of canned tomatoes)

  • 1 T. cumin

  • 1 T. Chili powder

  • salt and pepper; to taste

  • ground cayenne; to taste

  • garlic powder; to taste

  • One can pinto beans; rinsed

  • One can kidney beans; rinsed

    Instructions

1. In a medium skillet, heat the oil on medium heat. Add in the diced onion, pepper, and salt and saute for 4-5 minutes. Add in the ground turkey and cook until no pink remains. This should take around 10 minutes.

2. To the base of a crock pot or soup pot, add one large can of crushed tomatoes.

3. Add the seasonings.

4. Dump the beans into a colander and drain and rinse until no longer bubbly.

5. Add the beans to the crock pot or soup pot.

6. Lastly, add the meat and onions mixture.

7. If using a crock pot, turn to 10 hours and cook for 6-10 hours and serve.

8. If using a soup pot, cook the chili over medium heat until a simmer is reached. Turn heat to low and simmer for about an hour.

9. Serve with sour cream, grated cheese, jalapeños, and corn bread or crackers!

Notes:

Feel free to season however you like! I just included the basic seasonings.

I omit corn for my personal preferences due to the lack of digestion but you can feel free to add it!

I find using a crock pot for this recipe is useful for the people that are gone during the day or don’t have time to stand over a stove and cook. If you don’t have a crock pot, this recipe still works.

I serve my chili with cornbread but you can serve it with whatever you like!
