Garlic Lemon Chicken Thighs
Prep Time: 10 minutes; Up to 1 day to marinate
Cook Time: 25 minutes
Ingredients:
4-6 chicken thighs (bone in or boneless based on preference)
juice of 2 lemons
2-3 cloves of garlic; minced
fresh parsley; chopped
red pepper flakes; to taste
1/4 c. olive oil; divided
1 tsp sea or kosher salt
cracked black pepper; to taste
1 tsp smoked paprika
squeeze of honey or agave
Instructions:
To a large bowl, add your chicken thighs, lemon juice, herbs, olive oil, honey, garlic, and spices. Let sit for a minimum of 30 minutes covered in the fridge or up to a day for best flavor. I usually marinate mine ahead of time for 8-12 hours in a gallon sized bag or glass bowl with a lid.
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Arrange the chicken thighs on the baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165-175 degrees F.
Optional: At the end of your bake time, broil the chicken thighs for 2 minutes to achieve crispy skin.
Serve alongside your favorite veggies, in a wrap, or on a salad.
