Low FODMAP Honey Dijon Chicken Thighs

Honey Dijon Chicken Thighs with Rice and Green Beans
Servings: 4

Ingredients:

  • 6 boneless, skinless chicken thighs

  • 3 tablespoons Dijon mustard

  • 1 Tablespoon brown sugar or honey

  • salt, pepper, paprika; to taste

  • 1/2 cup water

  • squeeze of lemon juice

  • green beans; prepared

  • rice; prepared according to package instructions

Instructions:

  1. Lightly coat the bottom of a medium sized pot with olive oil.

  2. Combine the Dijon mustard, sugar, salt, and pepper in a small bowl. Place chicken thighs in the bottom of the pot. Spread half of the Dijon mixture on top. Flip chicken thighs over and spread the remaining Dijon mixture on top. Pour 1/2 cup water over the chicken and cook on medium low for 45 minutes to an hour, or until the chicken is cooked all the way through.

  3. While the chicken cooks, prepare the rice according to package directions and cook the green beans.

  4. Serve warm.
