Slow Cooker Creamy Tomato Basil Chicken

Recipe: Slow Cooker Tomato Basil Chicken

Ingredients:

  • 14 oz can diced tomatoes

  • 3/4 cup marinara sauce

  • 3/4 cup milk of choice

  • 2 tablespoons corn starch

  • 3-4 cloves minced garlic

  • salt, pepper, Italian seasoning, crushed red pepper; to taste

  • 4 boneless skinless chicken breasts

  • 2 tablespoons finely chopped fresh basil (optional but recommended)

  • mozzarella; for serving

  • buns, potatoes, rice or your favorite pasta for serving

Instructions:

1. Add tomatoes and pasta sauce to a slow cooker.

2. Whisk together milk and corn starch and add to the slow cooker. Stir in the seasonings.

3. Add chicken breasts and press down into the sauce.

4. Cook on low for 3-5 hours, until a meat thermometer reads 165 degrees F.

5. Stir in fresh basil and serve over pasta, rice, or with a salad and veggies!
