Sweet Potato Oatmeal Bowl

Ingredients:

  • One medium sweet potato

  • 1 tsp olive oil

  • 1 tsp sea or kosher salt

  • 1/4 cup rolled old fashioned oats

  • 1/2 cup milk of choice; water works as well

  • one small apple; diced

  • 2 T. Chia seeds

  • 1 T. pure maple syrup or raw honey

  • cinnamon, clove, nutmeg to taste

  • crushed pecans; for topping

Instructions:

1. Bake the potato: Preheat oven to 375 degrees. Cut one medium sweet potato in half and sprinkle with olive oil and salt. Bake skin side up on a sheet pan with parchment paper until fork tender (about 30 minutes). Each potato makes two bowls. Try baking the potato with your dinner the night before use to save time!

2. Cook the oatmeal: Add the rolled oats to a small pot with the milk or water. Add the chia seeds, maple syrup, diced apple, spices and stir until combined. Heat on medium until the mixture boils and turn to medium low until it thickens. Stir in half of the sweet potato until combined and heated all the way through.

3. Chop the add-ons: while the oatmeal is cooking, roughly chop the pecans.

4. Assemble: add the oatmeal mixture to a bowl and top with the toppings. Enjoy warm.

Notes: try making the sweet potato the night before to save time. One potato lasts for two bowls. Other optional toppings are other nuts, flax seeds, nutmeg or cloves, blueberries, banana slices, or a tablespoon of nut butter.

Although this recipe is a great source of carbs and fiber, it is not rich in protein. Pair it with two eggs or a protein shake to make it a satisfying meal.
