Caramelized Banana Pecan Oatmeal Bowls

15 Minutes; Serves: 2

Ingredients:

  • 1 cup old fashioned oats

  • 2 cups milk of choice

  • pinch of cinnamon

  • pinch of salt

  • splash of vanilla (can omit but recommend)

  • one sliced banana

  • 2 tsp. agave or maple syrup

  • tsp coconut oil

  • 2 T crushed pecans or walnuts

Instructions:

  1. Add the oats and your milk of choice to a medium pot and bring to a boil. 

  2. Turn the heat to low and add cinnamon, salt, and vanilla and let cook for 5-6 minutes until thickened. 

  3. While the oats cook, start the caramelized bananas. Heat a small skillet on medium heat with the coconut oil and maple syrup or agave and slice the banana.

  4. Add the sliced banana to the pan and cook for 5 minutes per side or until your desired brownness is reached.

  5. Assemble the bowls: Put the oatmeal in the bowls first and sprinkle with a little extra cinnamon. Top with the bananas first and then sprinkle the nuts overtop. You could also serve with a scoop of nut butter instead.

    Notes:

    Keep in mind that this recipe makes two servings and is a great source of slow burning carbs, but it does;t have much protein. To make this meal more filling and to avoid blood sugar spikes and the subsequent drop, try pairing this meal with a protein source such as a turkey sausage patty, a protein shake, some scrambled eggs, or a couple cheese sticks. Get creative!
