Meal Prep Breakfast Sandwich

These meal prep English muffin sandwiches are freezer friendly and last up to a month! They only take 20 minutes for 6 days of breakfasts that taste amazing and are much healthier than any fast food. Double the recipe for 12!

Meal Prep Breakfast Sandwich

Preparation Time: 20 minutes
Cooking Time: 10-12 minutes
Yield: 6 breakfast sandwiches

Ingredients:

  • 1 package English muffins

  • 6 frozen sausage patties; I recommend the turkey sausage. Can sub bacon or ham.

  • 6 eggs; beaten in a bowl

  • salt and pepper; to taste

  • 6 slices cheese of choice; pepper jack, cheddar, or Colby jack are my go-to

Instructions:

1. Preheat your oven to 325 degrees and heavily grease an 8x8 or a 9x9 square pan. For extra nonstick-ability, line the pan with parchment paper and give that a good greasing too.

2. In a medium bowl, crack and whisk the eggs with the salt and pepper. Dump the eggs into the prepared pan.

3. Bake the eggs for 15 minutes or until cooked and set. Remove from the oven to cool. Once cool, slice as evenly as possible into 6 pieces.

4. Carefully cut open the English muffins and place a slice of egg, a sausage patty, and a piece of cheese onto the muffin.

5. Wrap each sandwich tightly with parchment paper or foil and place into a big freezer safe bag.

6. Freeze the sandwiches for up to a month.

To Thaw: Pull out however many sandwiches you need the night before in the fridge. The next morning, heat wrapped in a paper towel in the microwave for 1 minute on each side or until cooked all the way through.
